Achinga mezhukkupuratti / Long beans stir fry

Achinga payar/  Long beans- 250gm
Shallots – 1 /4 cup
Garlic  –  4 nos
Red chilli powder – 1tsp
Turmeric powder – 1 /4 tsp
Curry leaves  – few
Mustard seeds – 1 /2 tsp
Coconut oil
salt to taste

Chop payar in to 1 /2 inch pieces.  Heat oil in a pan,  add mustard seeds, when it splutters add  garlic,shallots ,curry leaves  saute till it turns  brown in colour . Add chilli powder,turmeric powder and saute until raw  smell is gone.  Add chopped beans, salt and  mix well.  Sprinkle some water and cover and cook until beans  is cooked.   Open the lid and stir for 3 minutes in low flame . Serve hot with rice.
