Bitter gourd coconut milk curry/ Pavakka palu curry





Ingredients

Bitter gourd    –   1 no

Onion             –   1 no

Tomato           –    1 no

Green chillies         –    3 nos

Ginger   chopped    – 1/2 tsp

Curry leaves

Coriander powder  – 2 tsp

Chilli powder          – 1/2 tsp

Turmeric powder   –  1/4 tsp

Mustard seeds       –  1/2 tsp

Thin coconut milk    – 1 cup

Thick coconut milk  – 1/4 cup

salt as needed

coconut oil             – 2 tbsp

Method
Heat oil in a pan, splutter mustard seeds. Saute onions, green chillies, ginger, curry leaves. When it is sauteed well, add coriander powder, chilli powder, and turmeric powder. Add tomatoes and cook till it gets mashed. Add thin coconut milk bittergourd, salt, and boil. When bittergourd cooks, add thick coconut milk and switch off the stove.

  1. That is so inviting and I know for sure the goodness of bitter gourd. Its the right remedy for diabetic because I cook this veg for my other half. Pretty amazing combo of ingredients for that tongue touching marvelous spicy tangy flavors.

  2. You know, to tone down the bitterness, using coconut milk is a great idea. never tried this. It looks simple yet healthy. Can any vegetable beat the goodness that bitter gourd puts up in the table!Nope.
