Boiled Spice Cake/ Eggless Spice cake

Here raisins are boiled along with spices, butter and sugar to make a moist boiled cake.

Ingredients


 All purpose flour- 2 cups
Sugar – 1 cup
Butter – 1/2 cup 1 stick
Raisins – 1 cup
Dates, chopped – 1 cup
Cahewnut and almond, chopped – 1 cup
Ground allspice- 1 tsp
Ground cinnamon- 1 tsp
Ground cloves – 1/2 tsp
Water – 2 cups
Baking soda – 1/2 tsp
Baking powder – 1/2 tsp
Salt- 1/2 tsp



Method

Preheat oven to 180 degrees Celsius. Grease a 9 x 5 inch pan.

In a medium saucepan, combine raisins, butter, sugar, spices and water. Bring mixture to a boil. Allow to cool. Now add chopped nuts to this and stir. Keep this aside.

Mix together the flour, baking soda, baking powder and salt and mix into the set aside mixture. Bake for 1 hour or until just firm. Spice cake is best when moist.

  3. Allspice is a berry. In this recipe i have used powdered allspice. If u cant find allspice in grocery,
    As a substitution for 1 teaspoon of allspice, you can use 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and a pinch of ground nutmeg.
