Drumstick carrot stir fry

Ingredients

Drumsticks  – 2 cups
Carrot – 1cup
Tomato- 1 no
Greenchilli- 1 no
 Curry leaves-few
Shallots- 1 /4cup
Garlic cloves- 5
Chilli powder- 1tsp
Turmeric powder-1 /4 tsp
Mustard seeds – 1 /2 tsp
Salt as needed
Oil  

Method


Cut drumstick into 2 inch pieces, carrot ,tomato and shallots  length wise.
 
Heat oil in a pan, splutter mustard seeds. Add shallots and saute till golden brown. add green chilli, garlic and curry leaves and stir for a few seconds. Add  turmeric powder and chilli powder and saute.  Add  drum stick , carrot and tomato along with salt and little water and mix well. Cover the pan, allow it to cook for around 10 minutes or until the veggies are tender. Open the lid and stir for 2 minutes . serve hot with rice.
