Bottle gourd Tomato Curry / Lauki Tamatar

Bottle gourd tomato curry is a tangy curry with lauki and tomato as main ingredients.

The tanginess comes from tomatoes used in the curry.   

Lauki is a light vegetable generally recommended to patients as it is easy on stomach.  

This is a Sattvic recipe – No onion No garlic is used.

You can have this as a comforting soup.

The soupy consistency gets perfect tang from tomatoes, smooth texture from gourds, and refreshing flavor from coriander and asafoetida. 

This dish can be prepared without tomatoes also. 

INGREDIENTS

Bottle gourd – 500 gm
Tomatoes, grated – 2
Ghee – 1 tsp
Asafoetida – a pinch
Cumin seeds – ½ tsp
Ginger, chopped – 2 tsp
Turmeric powder – ½ tsp
Salt to taste
Coriander leaves, chopped – 2 tbsp

INSTRUCTIONS

Peel bottlegourd.

Cut gourd into 1-inch cube.

Heat ghee in a pressure cooker for 30 seconds.

Add asafoetida, cumin seeds, ginger, turmeric powder, and bottlegourd. Mix well.

Add one cup water and salt.

Pressure cook for one whistle. Reduce heat and simmer for 5 minutes. Let it cool.

Add grated tomato and cook till semi thick without covering it with a lid. Add coriander leaves. Serve hot.

  1. I make bottle gourd with moong dal, but your's looks yummier and easy too!! you are right, anytime for bottle gourd it is the ghee which gives that extra taste than any refined oil!!
