Vazhuthananga Pulissery / Brinjal in coconut and yogurt gravy

Pulissery( Moru curry ) is a traditional Kerala dish made using yogurt , ground coconut, and vegetable or fruits. This is on of the popular dish as part of the onam sadhya.  Try this yummy Brinjal pulissery .



Ingredients for Brinjal Pulissery


Brinjal   – 2 nos small (slit one brinjal into 4)


Ginger, thinly sliced     – 2 tsp


Green chilli, slit  – 4 nos


Garlic, sliced     – 4 nos


Curry  leaves – 1 sprig


Fenugreek seeds – 1/2 tsp


Coconut oil      – 4 tbsp


Chilli powder    – 2 tsp


Turmeric powder  – 3/4  tsp


Yogurt, whisked         – 1 cup


Salt as needed


For grinding
Grated coconut  – 1 cup


Cumin seeds      –  1/2 tsp


For tempering
Coconut oil  – 1 tbsp


Dry red chillies   – 3 nos


 Mustard seeds    – 1 tsp







Method


Grind grated coconut and cumin seeds to a smooth paste.


Heat oil in a pan, fry brinjal slices. Set aside.


In the remaining oil, splutter fenugreek seeds. Add ginger, green chillies, garlic, curry leaves. Saute them. Now add turmeric powder and chilli powder. Now add ground smooth coconut paste. Add fried brinjal slices. Now add yogurt and salt. Switch off the stove immediately.


Heat oil in another pan, splutter mustard seeds, dry red chillies, and curry leaves. Pour this to the above made curry.
