Vendakka Pachadi / Ladies Finger Pachadi

Vendakka Pachadi is a Kerala style Pachadi often served as part of Onam Sadya.

The main ingredients of vendakka pachadi are okra, which is fried to perfection. It is mixed with a thick curd based gravy.

In Onam Sadya, it is served in small portions on a banana leaf.

INGREDIENTS

Vendakka / okra – ½ kg

Turmeric powder – ¾ tsp

Salt

FOR GRINDING

Mustard seeds – ½ tsp

Cumin seeds – ½ tsp

Green chillies – 5-6

Grated coconut – ¾ to 1 cup

Curd – 1 cup

FOR TEMPERING

Mustard seeds – 1 tsp

Dry red chillies – 2-3

Curry leaves

Coconut oil – as needed

METHOD

Wash okra and towel dry. Cut both ends of okra.

Cut okra into slices.

In a mixer jar, add mustard seeds, cumin seeds, green chillies, coconut, and little water (3-4 tbsp). Grind the ingredients to fine paste.

Beat the curd to remove any lumps.

Heat oil in a pan. Fry okra till it is crispy. Set aside fried okra.

Heat oil in a pan. Add mustard seeds. When mustard seeds starts to pop, add dry red chillies and curry leaves. Saute well.

Now add ground coconut paste. Cook for 2-3 minutes to remove raw smell of coconut. Add water if required.

Add curd and salt now. Curd should not be too sour.

Add okra. Mix well.

Vendakka Pachadi is ready.
