Vermicelli burfi/Vermicelli squares

Vermicilli squares are an easy to make sweet when you have leftover vermicilli at home after payasams are made. 

Ingredients

Vermicelli – 150 gm
Ghee – 1/2 cup
Milk – 2 cups
Condensed milk – 1 cup
Sugar – as needed
Almonds and pistachios, chopped – for garnishing


Method

Heat ghee in a pan. Roast vermicelli to get a light brown colour. Set aside. 


Heat milk in a pan. Add roasted vermicelli to the milk. Cook for 3 minutes on low flame. Add condensed milk. Check for sweetness. Add sugar if required at this stage. Stir continuously until it thickens. 


Grease a bowl and pour the mixture into it. Flatten the mixture to get even surface. Lastly, sprinkle almonds and pistachios and press gently. Refrigerate to set. 


Once set, cut them into squares and serve.

  2. Beena, the vermicelli barfis looks so good and they brought back memories. My mum use to make them especially on special occasions especially when my dad and uncle had to take packed lunch to work.
