Dates Raisins Muffins

INGREDIENTS

Dates chopped – ½ cup
Raisins – ½ cup
Sugar – 4 tbsp
Lemon juice – ½ tsp
Butter – 50 gm
Powdered sugar – 1 cup
Eggs – 2
Vanilla essence – 1 tsp
Maida – 1¼ cups
Baking powder – ½ tsp
Baking soda – ¼ tsp
Curd – ½ cup

INSTRUCTIONS

• Preheat oven to 175 degree Celsius.
• Cook dates, raisins, sugar and lemon juice with ¾ cup of water. Set aside to cool.
• Mix butter, powdered sugar, eggs, vanilla essence, maida, baking powder, baking soda, and curd well.
• Add cooked dates-raisin mixture and mix gently.
• Pour the mixture to muffin tins. Bake for 20-25 minutes.
