This uttapam is made by mixing oats and dosa batter. It is topped with capsicum, tomato, and eggs, which makes it colorful and appealing to kids.

Ingredients
Dosa batter – 1 1/2 cup
Oats – 4 tbsp
Yogurt – 2 tsp
Onion chopped – 1 medium
Green capsicum finely chopped – 1/2 medium
Tomato finely chopped – 1 small
Green chillies, finely chopped – 2 nos
Eggs – 4 nos
For topping
Green capsicum, finely chopped – 4 tsp
Tomato, finely chopped – 4 tsp
Method
Take dosa batter in a bowl. Add oats and yogurt to this batter. Mix well.
Heat 1/2 tbsp of oil in a pan. Add onion and saute for 1/2 minute. Add capsicum, tomato and green chilli. Saute well. Switch off the stove. Cool slightly and add the mixture to the dosa batter and mix well. Add little water to batter mixture and mix well.
Heat a nonstick tawa. Add few drops of oil on top and wipe it with a tissue paper. Pour a ladle full of batter on the tawa and spread into medium size uthappam. Sprinkle 1 tsp chopped capsicum and 1 tsp chopped tomato on top and cook for 2 minutes.
Break one egg in a small bowl and slide it over the center of the uthappam. Add some oil around the edges and cook till the underside is crisp and golden. Flip and let the other side cook.
Prepare remaining uttapams the same way.
Serve with sambar and chutney
