Ingredients
Rice flour – 1 1/2 cup
Maida – 1/2 cup
Channa dal – 1/4 cup
Urdu dal – 3/4 cup
Fenugreek seeds – 1/4 tsp
Soda bicarbonate – 1/4 tsp
Salt to taste
Sugar – 1/2 tsp
Method
Wash and soak channa dal, Urdu dal and fenugreek seeds together in water for 4 hours. Grind them along with little water to make a smooth batter. In a steel bowl, add rice powder, maida, bicarbonate of soda, sugar and enough water to make a smooth batter. Batter should be free of any lumps. To this batter add dal paste and enough salt. Mix well with hands. Keep this overnight so that the batter rises. If needed water and salt can be added to get the right consistency.
Heat a nonstick pan, pour dosa batter and spread. Sprinkle oil or ghee on the sides of the dosa. When dosa is crisp and brown, turn it to the other side. Serve crispy dosa along with sambar or chutney.
