Brinjal – 1/2 kg
Coconut – 3/4 cup
Green chllies – 4 nos
Pearl onion – 1 cup
Garlic – 4 cloves
Coriander leaves – 2 tbsp
Egg –2 nos
Coconut oil as needed
Mustard seeds – 1/2 tsp
Pearl onion – 1 tsp
Curry leaves
Salt as needed
Cut brinjal into small cubes. Coarsely grind grated coconut, green chillies, pearl onions, garlic. mix this paste to brinjal cubes. Cook this mixture along with curry leaves and salt. When it is cooked, add whipped egg and mix thoroughly.
Heat oil in a pan, splutter mustard seeds. To this add, pearl onions and curry leaves. Pour overthoran.
Thoran goes well with chappati , rice etc.
