Aloo methi


Potatoes                  –    4 medium sized
Green  chillies          – 2-3
Ginger  minced         -1 piece
Onion  chopped        – 1  medium
Turmeric powder      –   1 /2 tsp
Cumin    seeds          –   1 /2 tsp
Tomato finely chopped  –  1  large
Fenugreek  leaves  washed and  finely  chopped
oil                                 – 1 tbs
salt   to taste

1)  Boil  potatoes. Dice them.

2)   Heat oil  in a wok or pan, splutter cumin seeds, saute onion  till  soft and transparent. Now add chillies, ginger, tomato, turmeric pdr, and fry until  pulpy for 5-7 minutes. Add fenugreek leaves and potatoes. Cook for 5 minutes  till it blends well. Add salt. Serve hot with chapati or roti.
