Avocado Pudding

Ingredients


Ripe Avocados  – 2 Nos.


Milk    – 1 cup


Sweetened condensed milk – 1 cup


Gelatin  – 3 tsp 


Lemon juice – 1 tsp (Optional)


Salt – a pinch



Method


Place 1/4 cup of milk in a small bowl, sprinkle gelatin over and stir to dissolve.


Add remaining milk to a small pan and warm over low heat.


Pour a small amount of warmed milk into bowl with milk and gelatin, stir, then pour mixture into pan with warmed milk.


In a blender, add avocados, condensed milk, and warmed milk with gelatin. Puree until smooth. Divide evenly into serving cups, refrigerate for an hour.

  1. Love this invention Beena. So tempting and though I have never pudding with avocado, I am so excited seeing how the pudding turned out.
