Ingredients
Bitter Gourd / Pavakka – 1 medium
Raw Mango – 1 small size
Green chili, split – 3
Turmeric powder – ½ tsp
Salt
To Grind
Turmeric powder – ½ tsp
Chilli powder – ½ tsp
Shallots – 3
Garlic – 3 cloves
Cumin seeds – ½ tsp
Water – ¼ cup
For Tempering
Mustard seeds – ½ tsp
Dry red chilies – 3
Curry leaves – few
Shallots – 2-3
Coconut oil
Method
1. Wash and split open the bitter gourd. Discard seeds from bitter gourd. Cut bitter gourd into small pieces. Cut mango into small pieces.
2. Grind grated coconut, turmeric powder, chilli powder, shallots, garlic, cumin seeds with 1/4 cup water. Set aside ground paste.
3. Heat a pan. Add oil. When oil is hot, add curry leaves. Now add shallots and green chillies. Saute for 2 minutes. Add bittergourd pieces. Saute for 2-3 minutes. Add 1 cup of water. Cook for 4 minutes. Now bittergourd will be half cooked. Add raw mango and 1/2 tsp turmeric powder. Cook for 5 minutes. Add salt, ground paste, 1 cup of water. Allow it to boil. When it starts to boil, close the lid. Cook on low flame for 5 minutes. Open the lid. Bitter gourd curry is cooked. Switch off the stove.
4. Heat oil in a pan. Add mustard seeds. Let it splutter. Now add shallots, dry red
chillies, and curry leaves. When shallots turn light brown, switch off the stove. Pour this to curry.
Serve with rice.
Tip:- Place bitter gourd in a bowl. Add some salt. Mix well with hands. Keep it for 10 minutes. After 10 minutes, squeeze the bitter gourd. This helps to remove some bitterness from it.
