Carrot Beans Pepper Fry


Beans chopped – 1 cup
Carrots chopped – 1 cup
Shallots – 10
Green chillies – 2
Garlic – 2 cloves
Turmeric powder – 1/4 tsp
Pepper powder -1 tsp
Curry leaves – 1 sprig
Salt – as needed
Oil – as needed.


Heat oil in a pan. Splutter mustard seeds. Saute onions, green chillies, and garlic. When it turns brown, add turmeric powder, pepper powder, and fry for 1 minute in a low flame. Add chopped carrots and beans. Sprinlke some water over it. Add salt and simmer for 5 minutes, then stir for 2 minutes. Carrot-beans pepper fry is ready to be served with rice.
