Chickpeas and brinjal curry / Vella kadala vazhuthananga curry

  This Chickpeas brinjal curry is a quick and easy curry. Protein rich chickpeas and brinjal cooked in sambar powder,tomato paste and  cooked till it thickens. It perfect with chapatti/ roti etc


Boiled white chickpeas  – 1/2- 1 cup

Violet brinjal /Egg plant – 1/4 kg

Onion    – 2 nos

Garlic paste – 1 tbsp
Tomato paste – 1/2 cup
 Sambar powder- 2 tsp
Oil    – 4 tsp
Salt as needed
Coriander leaves,curry leaves


Heat oil in a pan, saute chopped garlic. Add onion, brinjal and saute well.  Then add tomato paste, chickpeas, salt, sambar powder and cook on low flame . When the curry thickens, add chopped coriander and curry leaves.
