This is a delicious quick cake made using dates and cashew nuts.Dates cakes are excellent for breakfast or tea time snack.
All purpose flour/Maida – 300 gm
Baking powder – 1 tsp
Dates, chopped (remove the stone) – 300gms
Baking soda – 1 tsp
Boiled water – 300 ml
Sugar – 125 gm
Butter – 100 gm
Egg – 1 no
Cashew nut, chopped – 75 gm
Preheat oven to 180 degrees Celsius.
Sift all purpose flour and baking powder. Keep this aside.
In a bowl, add chopped dates and baking soda. Add boiled water and keep aside.
In another bowl, add sugar and butter. Using a hand mixer or a wooden spoon, mix until it is fluffy. Now add egg and blend well. To this add, chopped dates and baking soda mixture along with water . Add chopped nuts. Mix gently.
Line a cake tin and fill this with the cake batter. Bake for 45 minutes in the preheated oven.
