Ivy gourd / Kovakka, clean and sliced into roundels – 2 cups
Green chillies, cut into small pieces – 4
Onion, small – 1
Grated coconut – 1 cup
Garlic – 2 cloves
Turmeric powder – ¼ tsp
Mustard seeds – 1 tsp
Salt – as needed
Oil – as needed
In a bowl, combine ivy gourd, crushed green chilli, grated coconut, crushed garlic turmeric powder, and salt. Mix well with your hands. Set aside this ivy gourd mixture.
Heat oil in a pan. Add mustard seeds. When they start to crackle, add chopped onion and curry leaves. Fry for 1-2 minutes. Add the ivy gourd mixture and stir well. Sprinkle 2-3 tsp of water. Cover with a lid and cook for 6-7 minutes or until they turn dry. Open the lid and stir fry for another 3-4 minutes. Serve hot.
