Mixed vegetable thoran

Ingredients

Cabbage chopped – 1 cup
Carrot chopped – 1/2 cup
Onion chopped – 1/2 cup
Half cooked toor dal – 1/2 cup
Turmeric powder – 1/4 tsp
Chilli powder – 1/2 tsp
Pepper powder – 1/4 tsp
Ground Grated coconut lightly – 1/2 cup
Ginger chopped – 1 tsp
Green chilli chopped – 2 tsp
Mustard seeds – 1 tsp
Dry red chillies – 4 nos.
Curry leaves – 2 sprigs
Urad dal – 2 tsp
Oil
Salt as needed

Method

Heat oil in a kadai, splutter mustard seeds, then add urad dal, dry red chillies, curry leaves. Saute ginger and garlic. Add cabbage, carrot, onion, half cooked toor dal, turmeric powder, chilli powder, pepper powder and cook in low heat. Stir them occasionally. Add ground coconut , salt, 1 tbsp oil to this and they are ready to use.
