Clean and chop bittergourd into small pieces.  Soak dried makeral in water for 15 minutes. If the mackeral is too salty, wash in several changes of water to take out some of the saltiness.  Shred them into small pieces.  Mix all the ingredients thoroughly with your hands except coconut oil. Keep the mixed ingredients in a kadai and cook. When the steam starts to come, pour in the coconut oil and lower the flame. Close the lid and let the bittergourd cook. Stir in between. When the bittergourd is cooked, curry is ready to be served.
This simple and delicious curry goes well with rice.
