Basmati Rice – 1/2 cup
Sugar – 1 cup
Milk – 4 cups
Rosewater – 1 tablespoon
Cardamom powder – 1/2 teaspoon
Cashewnuts – 50 gms
Saffron – 5 gm (soak for 1 hour in 1/4 cup of hot water)
Soak Basmati rice in water for 2 hours and grind to make a smooth paste. Remove the remaining paste sticking on to the mixer jar with water and add to the above mixture to achieve a water like consistency. Now add 3 cups of milk and 1 cup of sugar to the mixture and cook in low flame until it is thick in consistency. when it starts getting thick, add 1 cup of milk. Now add soaked saffron to this and stir well. When it starts boiling, add broken cashews and cardamom powder and stir for 2 minutes. Now turn off the stove and add rosewater. Decorate it with almonds, pistachios, etc. and serve in earthernware. Serve cold.
My favorite dessert. I make it with rice flour.
