Potato tomato red curry / Urulakizhangu tomato curry

A  fantastic  vegetarian  dish  so easy  to  prepare and yet taster   with  chapati or pathiris.


Ingredients


1)    potato  peeled and cut  in to pieces –  250 gms

2)    tomato  chopped  –  1  no
3)    Onion    chopped   –  1 no
4)     Red chilli powder -2 tsp
5)     Fennel powder   – 1 /2  tsp
6)     Turmeric  powder- 1 /2  tsp
7)     Salt to taste
8)     Coconut  oil  – 2 tsp
9)      Garlic crushed –  1 /2   tbsp
11)     Coriander leaves -2 tbsp

Method


Pressure cook the potato,tomato,onion,red chilli powder, turmaric powder,fennel powder and salt together for 2 whistle and keep aside.


Heat  oil in a  pan and saute the garlic and curry leaves. Add  the pressure cooked potato and stir  well serve hot with chapatis, and rice.
