Raw banana curry
Recipe – Sanjeev Kapoor


Ingredients

Raw bananas          –  4 medium ( peeled, 1 inch pieces)

Cashew nuts          –  15 nos


Grated coconut        – 2 tbsp


Red chilli powder     –  1/2 tsp


Turmeric powder       – 1/4 tsp


Jaggery grated         –  1 tsp


Yogurt                – 2 tbsp


Ghee                  – 3 tbsp


Cumin seeds           – 1 tsp


Ginger chopped        – 2 inch pieces


Salt


Fresh coriander leaves chopped  – 1 tbsp

Method

Grind cashewnuts and coconut together. Now add red chilli powder, turmeric powder, jaggery and yogurt. Grind to a smooth paste. 


Heat ghee in a kadai, add cumin seeds. When they begin to change colour, add chopped ginger and saute for half a minute. Add the banana pieces and stir. Add salt to taste and mix.


Cover and cook on low heat till the banana pieces are almost done, add the ground paste and mix well. 
Add salt to taste, cover and cook for 2 minutes or till the bananas are fully done. 


Garnish with fresh coriander leaves and serve hot.
