Sardine fry / Mathi varuthathu/ chala varuthathu

Sardines   –  6 nos

Ginger garlic paste – 2 tsp

Chilli powder – 2 tsp

Pepper powder – 1 tsp

Turmeric powder – 1/4 tsp

Salt as needed

Oil for deep fry

Clean  and wash sardines. Give 4-5 slits with knife on the fish and keep aside.  Mix ginger garlic paste, chilli powder, pepper powder, turmeric powder and salt with little water. Now with your hands spread the thick masala over the fish. You should coat the masala well on the slits. Keep marinated sardines for 1-2 hours. After that, heat oil in a pan and fry the sardines on both sides. Sardine fry/mathi varuthathu is ready.

When you get raw sardines with too much oil in it, use less oil for frying.
