How to make soft wheat puttu?
It’s obvious Keralites take their breakfast puttu quite seriously. The popular Dhe puttu restaurant in my hometown Kochi is a big example of how we love our puttu. The variety Dhe puttu provides is as versatile as its owner who is a filmstar Dilip himself.
If the very idea of making and eating wheat puttu puts you off just because of the difficulty to arrive at the right consistency to make the puttu mixture soft – time for change. This 3 ingredient recipe makes you fall in love with wheat puttu for its easiness and softness. Try it. It’s a no water recipe.

Ragi puttu/Finger millet puttu
Ingredients
Wheat flour – 1 cup
Boiled Rice – 1 cup
Grated coconut – 1/2 cup
Salt
Method
Place wheat flour, boiled rice and salt in a blender. Blend for about 50 seconds. (Avoid overblending as it leads to lumpy flour). Transfer this to a bowl. Stir the mixture well so that no lumps are there. Place the mixture in puttu maker with sprinkling of grated coconut and then puttu mixture.
In a pressure cooker, add 2-3 cups of water, close the lid, and place the puttu maker on top. When the steam starts coming out of the puttu maker, let it cook further 2-3 minutes and it will be done.
Serve puttu with kadala curry, nadan tharavu curry, beef pachakaya curry, thattukada curry, mutta curry, chicken curry.

This is a yummy dish…very popular in Kerala.
Being steamed and prepared without oil puts the 'puttu' in the list of healthy, non-fat dishes. I think 'puttu' is unique to Kerala. As mentioned,there are many variations to this dish; some prepare it with Ragi that makes it very nutritious. Usually 'puttu' is prepared with rice powder.

Ah… I have tried with ragi and normal rice flour with cooked rice and I am wondering why I never tried with wholewheat flour… must try soon… looks so soft!
