Sprouted mung beans can be used in salads, curries or noodle preparations. Here I have sprouted moong beans to make this delicious chat.
Moong sprouts, cooked lightly – 1 cup
Onion, finely chopped – 1
Tomato, finely chopped – 1
Coriander, finely chopped
Sev – a fistful
Chaat masala – as needed
Salt to taste
Sweet tamarind chutney -1 tbsp
Mix moong sprouts, onion, tomato, coriander, chaat masala and salt. Drizzle tamarind chutney. Mix gently. Add a fistful of sev and coriander on top. Serve immediately.
