Sweet potato stir fry/Madhura kizhangu ularthu

Ingredients

Sweet potato / Madura Kizhangu – 250 gm

Onion, sliced – 1 big

Chilli powder – 2 tsp

Turmeric powder – 1/4 tsp

Garam masala powder – 1/2 tsp

Mustard seeds – 1/2 tsp

Curry leaves

Water – 1/4 cup

Salt – as needed

Oil – as needed

Method

Peel sweet potato and wash them.

Cut into roundels. Soak them in water. Keep aside

Heat oil in a pan.

Add curry leaves and sliced onion. Fry till they turn translucent.

Add sweet potatoes.

Mix well with salt, chilli powder, and turmeric powder.

Now add 1/4 cup of water. Cook them with closed lid.

When it is cooked and water is no more, open the lid, add garam masala.

Sweet potato stir fry is ready.

Serve sweet potato stir fry with moru curry and rasam.
