Sweet potato stir fry/Madhura kizhangu ularthu


Sweet potatoes /  Madura kizangu   –  250 gm

Onion, sliced   -1 big                            

Chilli powder  -2 tsp                                    

Turmeric powder- 1/4 tsp                                

Garam masala  -1/2 tsp                                    

Mustard seeds  -1/2 tsp                                    

Curry leaves

Water – 1/4 cup

Salt as needed

Oil as needed


Peel the skin of sweet potato and wash them . Cut them in round shapes and soak them in water. Keep aside.

Heat oil in a pan, splutter mustard seeds. Add curry leaves and sliced onion and fry them till they turn translucent. Add sweet potatoes and mix well with salt, chilli powder, and turmeric powder. Now add 1/4 cup of  water. Close and cook them. When it is cooked and water is no more, open the lid, add garam masala. Sweet potato stir fry is ready. This is served as a side dish with moru curry and rasam.
