Bottle gourd is a light vegetable generally recommended to patients. This dish can be prepared without tomatoes also.

Bottle Gourd – 500 gm
Tomatoes grated – 2 nos
Ghee – 1 tsp
Asafoetida – a pinch
Cumin seeds – 1/2 tsp
Ginger chopped – 2 tsp
Turmeric powder – 1/2 tsp
Salt to taste
Coriander leaves chopped – 2 tbsp
Peel bottle gourd and cut into 1 inch cubes.
Heat one tsp ghee in a pressure cooker for 30 seconds, add asafoetida, cumin seeds, ginger, turmeric powder, and bottle gourd . Mix well. Add one cup water and salt. Pressure cook for one whistle. Reduce heat and simmer for 5 minutes. Let it cool. Now add grated tomato and cook till semi thick without covering it with a lid. Add coriander leaves and mix . Serve hot.
