Bottle gourd is a light vegetable generally recommended to patients. This dish can be prepared without tomatoes also.

Ingredient
Bottle Gourd – 500 gm
Tomatoes grated – 2 nos
Ghee – 1 tsp
Asafoetida – a pinch
Cumin seeds – 1/2 tsp
Ginger chopped – 2 tsp
Turmeric powder – 1/2 tsp
Salt to taste
Coriander leaves chopped – 2 tbsp
Method
Peel bottle gourd and cut into 1 inch cubes.
Heat one tsp ghee in a pressure cooker for 30 seconds, add asafoetida, cumin seeds, ginger, turmeric powder, and bottle gourd . Mix well. Add one cup water and salt. Pressure cook for one whistle. Reduce heat and simmer for 5 minutes. Let it cool. Now add grated tomato and cook till semi thick without covering it with a lid. Add coriander leaves and mix . Serve hot.

I make bottle gourd with moong dal, but your's looks yummier and easy too!! you are right, anytime for bottle gourd it is the ghee which gives that extra taste than any refined oil!!
