Just like banana fruit, stem of banana is a good source of potassium and vitamin B6. Banana stem is a rich source of fiber, which keeps you satiated for long. Hence if you are on a weight loss journey include banana stem in your diet. Vitamin B6 is helpful in production of hemoglobin. It improves the ability of the body to fight infection. Potassium helps in the functioning of muscles. Banana stem is a diuretic, which in turn helps detoxify the body. It is used to prevent and treat kidney stones.
Horsegram / Muthira – 3/4 cup
Banana stem/ Vazhapindi – 4 cups
Grated coconut – 1 cup
Dry red chillies – 3 Nos
Cumin seeds – 1/4 tsp
Pearl onions – 4 Nos
Garlic – 3 Nos
Turmeric powder – 1/4 tsp
Onion, chopped – 1 small
Green chillies, chopped – 3 nos
Mustard seeds – 1 tsp
Salt as needed
Coconut oil – 2 tbsp
Remove the outer skin of banana stem. Cut it into circles and remove excess fibre with the fingers. Cut it into small cubes. Soak the banana stem cubes in buttermilk. Pressure cook banana stem with one cup of water and salt till 3 whistles. Keep them aside.
Pressure cook horsegram. Keep them aside.
Coarsely grind grated coconut, red chillies, pearl onions, cumin seeds, garlic and turmeric powder. Keep the ground paste aside.
Heat oil in a pan, splutter mustard seeds. Add chopped onion, green chillies and curry leaves. When onion turns light brown in colour, add ground paste and saute them well. Now add cooked banana stem. Mix well. Add cooked lentils. Check for salt and switch off the stove.
