Vendakka varathathu / Roasted ladies finger

Ingredients

Ladies finger / Vendakka  – 10 nos to be slit without splitting.

Coconut oil /ghee            –  1/4 cup

Shallots                             –  6 nos

Peppercorns                     – 1 1/2 tbsp

Cinnamon                          –  1 piece

Cloves                               –   4 nos

Aniseeds                            –  1/2 tsp

Salt                                     – to taste

Method of preparation

Grind shallots, peppercorns, cinnamon, cloves and aniseed well together.

Apply the mixture within and outside the ladies fingers.

Put in the steamer for 2 to 3 minutes.

Heat oil / ghee in a pan.

Add the steamed ladys fingers and saute for 2 minutes.

Transfer to serving dish .
